Adobo – a Moment in Time

We’ve just had our dinner and this was the last photo I took. I wasn’t thinking of the daily prompt when I took it. I thought I’d just take a photo of what I cooked tonight. It was chicken adobo (marinate the chicken and mushrooms with soy sauce, vinegar, garlic, whole black peppers, bay leaves and ginger; fry and brown the chicken first then add the rest of the sauce and mushrooms; simmer it until cooked – yummy!), boiled brown rice (normally we have basmati rice but I thought we should try to be healthy by having brown rice) and steamed green beans and peas. We also had a bottle of Chablis to go with it. We’ve enjoyed it!

Adobo is one of my favourite dish from the Philippines. We usually have it when we go for picnics because it doesn’t matter if you eat it cold. In fact, it’s better when it’s a day old. Aside from chicken, you could also have pork adobo, which is delicious. Every time I cook it, it just reminded me of the Philippines and the picnics that we had. Another thing that’s good about adobo, there are no two adobos alike, each one can have a different flavour every time you cook it. And it’s so easy to make. Trust me, I’m not a good cook, but people like my adobo! Cheers every one!
