Here are some of the food we had when we were in Kerala, India. Rice and cassava (tapioca) form the staple food. All main dishes are made with them and served along with kootan; the side dishes which may be made from vegetables, meat, fish or a mix of all of them. The main dish for lunch and dinner is boiled rice.
Kerala is known as the “land of spices”. One has to take food with right hand. Almost every dish prepared in Kerala has coconut and spices to flavour the local cuisine giving it a sharp pungency that is heightened with the use of tamarind, while coconut gives it its richness, absorbing some of the tongue-teasing, pepper-hot flavours.
